but damn it makes good chicken!
I have been seeing these "flat" chickens lately in the grocery store, the come seasoned which of course makes them more expensive than regular whole chicken. Having a whole chicken in the freezer and bored of just roasting it as usual I started to google, which lead me to "spatchcock".
In a nut shell all you do is cut the back bone out of the chicken and then either just push it down flat or remove the breastbone (keelbone). The huge plus about preparing the chicken this way is that it cooks and browns evenly and far quicker than regularly roasting it. So today armed with my kitchen shears I thought here goes nothing. If it turns out a disaster I will just chuck the whole mess into the crock pot. If it works I will grill a whole chicken.
It worked! so I seasoned it and tossed it on the grill. It was the moistest chicken I have made...ever because of the even cooking. I don't think I will ever just roast a chicken again.
I have converted to spatchcocking!

I wish to live for several hundred or several thousand years just to see what will happen to life as we know it. Then I realize that at only 47 I am already weary. What would be the point in sticking around watching those who have learned nothing from the past do it all over and over again?
Civilisations have risen and fallen since time for man began. I have no doubt it will fall and rise again that is IF it doesn't destroy the world it needs to thrive in first.
I prolly shouldn't be allowed to sit on the porch and watch the sunset, my mind does wander...

The only marks that count are you passed or you passeded betterer than some one else.
You know what? even if you passed betterer that is the same as passing back in the old days but just barely,
If you failed then you just had to work as hard as your peers to keep up.
I think I am too fucking old to get this.
I appreciate that mean shouldnt have a place what I dont appreciate is giving any and everyone a gold star just so they can feel good for a minute.
