Garden Fresh Tomatoes..
Sooo easy and so good..and looks so nice!

Slice tomatoes..add salt..if ya like
crumble feta cheese over top each tomato slice
sprinkle with balsamic vinegar
top with fresh ground pepper ...enjoy!
Ahhh the joys of summer smile

Home grown tomatoes, the best, no argument there. The following pics are from a few years ago, growing conditions have not been good the past couple of years. You gotta do something with the excess.

first you pick them


then you give them a ride in the processor


then you apply some heat


While that's going on you go outside and pick some more


Then you serve, yum yum!


Repeat as often as necessary!

Slice ya Mardo's lay on a large plate
Salt and Pepper them VERY generously
drown them with cream absolutely drown them drool
turn ya Mardo's over and over to ensure max saturation
consume with knife and fork, trying to squish some pulp into the plate
after consuming the chunky bits drool
take copious slices of FRESH white bread
and soak up the mushy mess of salt pepper cream and mardo innards
until the plate looks like it don't need washing drool
sliced cucumber can be alternated slice for slice with Mardo's too drool
exact method as above drool drool drool drool drool

Rightround, you can also freeze them. You can make a sauce and freeze it in zip lock bags. OR, you can freeze them whole. Just wash, dry off and put into zip lock bags. When you use them, just let them thaw just a little, run under a little cold water and the skin will come right off. Use as you would canned.

thanks Lenny! I might freeze some whole. I already made a big thing of sauce and have it in a vaccum seal bag in the freezer. Do you squeeze the seeds and guts out before you cook it? That part is not fun. lol

If I'm making sauce from fresh tomatoes, I like to remove most of the seeds because there is excess liquid there. I quarter them first, which makes removing it easy. If I'm using frozen or canned, I use them as is.
