Bacon, corn & sweet potpto soup...
Bacon makes everything taste great and this soup is no exception..make sure ya get it good and browned before adding it to the slow cooker..you will need
10 slices of bacon, cut into 1/2 inch pieces
1/4 cup all purpose flour
2 cups flavourful lager beer
4 cups onion, coarsely chopped
8 cups chicken stock
5 cups sweet potato, peeled and cut into 1/2 inch cubes
2 cups grape tomatoes, whole
2 cups frozen corn
1/4 tsp pepper flakes
salt & pepper to taste
1 cup fresh cilantro, coarsely chopped
1 cup green onions thinly sliced

In med fry pan brown bacon, add flour to pan and stir together with the bacon fat. Add 1 cup of the beer to fry pan and scrape up browned bits.Increase heat until mixture thickens (about 2 min)then add all this mixture to slow cooker.
2) Add to the slow cooker onions,second cup of beer,chicken stock,sweet potoat, tomatoes, corn and pepper flakes.
3) cook on high for 6 hours..Once the soup is ready stir in the cilantro and green onions and serve!

sounds very good but i don't think it will all fit in our crock pot.... can ya cook it in a dutch oven on low heat... 250F degrees??? and for about how long???

Dont see why ya couldnt.. I`d let it go till the potatos are soft smile
